Sammontana’s quest to seek out the very best ingredients extends to the southern region of Apulia where Italy’s most flavoursome cherries are found. The historic brand Ambrosio transforms juicy Forlì cherries into products used by the confectionery and baking sectors and, of course, our Cinque Stelle cones with their distinctive red deliciousness!

SWEET SUCCESS

The Ambrosio brothers have been producing raw ingredients with passion and know-how for the Italian and overseas confectionery and baking industries since the Seventies. One of their most distinctive products is the Forlì cherry, preserved in alcohol and used for desserts, pralines and last, but not least, delicious gelato.

A TASTE OF APULIA

Forlì cherries are grown south of Bari in the towns of Acquaviva delle Fonti, Casamassima, Turi, Putignano, Noci and Alberobello. The most prized varieties are Ferrovia and Giorgia.

ITALIAN CHERRIES

The cherry tree is a majestic wonder of nature with a special beauty that changes throughout the various seasons. In spring it is a glorious white cloud of blossom, while summer sees it laden with plump red fruit. The Forlì variety used for our Cinque Stelle gelato has a soft consistency and delightful flavour. It tends to be 50-60% smaller in diameter, is round and contains a pit that is relatively easy to remove.

THE PERFECT ITALIAN CHERRY

Its pulpy, consistent texture makes the Forlì cherry ideal for the confectionery and bakery industries. It vermillion-red skin gives way to a pinkish pulp with a sweet, juicy flavour that is robust and crunchy. Whether preserved in alcohol, candied or transformed into jam, it is absolutely delicious.

A PROTECTED PRODUCT

The town of Bisceglie, leading Italian agricultural groups Confagricoltura, Coldiretti and the Italian Confederation of Farmers, together with the Bisceglie Cherry Association and various local cooperatives, created a consortium to promote the local cherries, run the division and ensure transparency across the cherry sector. Italian cherries are brimming with health benefits and contain depurative, detoxifying, diuretic and anti-inflammatory properties.
